MY STORY

This is My Story of How I Overcame My Own Health Problems.

I had Crohn’s Disease, which is an auto-immune disease where your body attacks itself instead of working properly.  Your intestines become inflamed and stop functioning, so you are not absorbing nutrition from the food you eat.  You are basically starving to death even though you continue to eat.  The disease can affect any part of your whole intestinal tract.  I have also struggled with depression since I was a teenager.

When I was 3 months pregnant with my second child I came down with the worst sore throat I have ever had in my life.  I ended up in the emergency room because of the pain.  My throat had what looked like big blisters on it.  I didn’t have any symptoms again until after the birth of my daughter, but the thought of eating meat was unbearable, so I didn’t eat any meat for 9 months.  By this time I started having daily stomach aches. When my daughter was 1 ½ years old I had my appendix removed and never felt well again after this surgery.  I actually thought the doctor had possibly left a sponge or something inside of me during surgery.  I called the doctor’s office to see if that was possible.  The receptionist, I think, thought I was joking but it was no joke to me.

Several Months Later I was Diagnosed with Crohn’s Disease.

After the diagnosis of Crohn’s came back, there was of course, the onslaught of medications.  The steroids were especially bad news for me.  After each round I felt 10 times worse.  I was sent to radiology to have an x-ray of my small intestine. They gave me Barium, a white thick liquid that would show up in the x-ray.  It took me 2 hours to drink the Barium, because I thought it would all come right back up.  If it did, I would have to start all over.  (I am telling you, the x-ray techs were very annoyed with me!)  The results: my small intestine was almost closed off. Then there was the “joy” of induced vomiting and diarrhea all night long before my colonoscopy.  The results: I not only had the disease in my small intestine but also in my large intestine.  One year and 1 month after I had my appendix removed, I had about 10 inches of my intestine removed.  I still didn’t feel well.  I was in the bathroom up to 10 times per day and was trying to take care of 2 young children.  My medications were not doing anything to help the Crohn’s disease, and were making my hair fall out.

At this point I decided it was time to take matters into my own hands.  I had to make some changes.  I did a lot of research on the internet, talked to people, asked a lot of questions and started trying different things to see what would help.

I did some Homeopathic treatments which helped me survive while I was learning.  Then it was time for all the food changes.  I am not going to lie to you this was not an easy process.  I was told bits and pieces by different people, and had no recipes to fall back on.  I was on my own.

The First Thing I Did..

I bought a wheat mill so I could grind my own grains. (I had tried the store bought whole wheat flour, and had terrible stomach aches with that.  I found that if I ground the wheat myself I did just fine.   I stopped eating white flour.   Then I stopped eating sugar.  This was extremely hard!I switched to raw honey. (YUM!)   I also started drinking distilled water (I would never go back to anything else now, it’s so good).  I bought some grass fed beef, and tried to make more natural choices with chicken.  I never have eaten a lot of pork, so that wasn’t a problem.

I switched to raw milk and that’s when the magic happened for me, it healed my stomach.  I love it, and my family loves it.  I have also stopped using any hydrogenated oils.  Instead, I use butter, coconut oil and olive oil for most of my cooking.  Coconut oil seems to soothe my stomach and gives me energy. I added more vegetables to my diet.  I like to eat beets on a regular basis. (My paternal grandmother also had Crohn’s Disease which we didn’t find out until I was diagnosed.  Her doctors always told her, her health problems were all in her head.  She passed away in her mid 50’s.  One of the few things she could eat was beets, so I figured that would be a good choice for me. (Besides they’re delicious!)   Liquid cod liver oil has been a great help also (orange or lemon flavored of course).  I also try not to eat any preservatives or artificial ingredients.

All these changes were a gradual process.  Once I mastered one thing, I moved on to the next.  By this time I was off sugar completely, except for the occasional fumble.  I was alive again, feeling good, and had more energy than I had had in 4 years.  I was even able to have another child.   I will not go back to my old ways no matter what.

I Also Noticed a Significant Difference in My Family As Well.

My husband has a very tiring schedule at work and says he probably would not be able to tolerate it if he wasn’t nourished so well at home.  My children are healthy and active and much happier when eating healthily as well.  Don’t get me wrong, they still like sweets, it’s just in controlled portions.  They have felt the difference in their own bodies when they have eaten a lot of sugar, in one form or another, and prefer to have less if they think about the after effects. I have been healthy for several years now and feel better physically, mentally and emotionally than I ever have in my entire life.

  2. Hi Tiffany,
I appreciate you sharing your story with the world. I have 2 children out of 5 with crohns! It has been such a trip. One child handled the treatments and can eat anything much to my dismay! ( it drives me crazy) My daughter on the other hand is having a hard time with her diet!!! I have started using spelt instead of wheat and I have ground my own grains for years!! I would love to keep in touch and share ideas!
    Thanks for your blog!

    • Thanks Amy,
I am sorry to hear about your children. I have been using a lot of sprouted wheat lately and really like it. I don’t know if that would work for your daughter, but even sprouting the spelt before using would be a good idea. Feel free to ask me any questions, I’ve learned more since writing my story, and my book.
      Good luck with everything!

  3. Tiffany,

I have been using sprouted wheat, which I then dry in the dehydrator, but it seems to clog up my wheat grinder when I try to grind it. I probably just need to get a new wheat grinder, but have you ever noticed a similar problem with your sprouted wheat?

  4. Annalyn,
Hi, I have a nutrimill and with my sprouted/dehydrated grains I have to turn it more on the coarse side to grind. When I am grinding regular grains I put it straight up, but when I grind sprouted grains I have to go more to the right. Hope that makes sense.
