Tuna Salad, Salad

This is part of Tuesday Twister at www.gnowfglins.com

We enjoyed this tuna salad, salad this past week, among many other things. However this is the only picture I have.

This recipe is simple, nutritious, and very easy to make.

I am happy to announce that those greens on that plate all came from my garden! They were and are delicious!! There is lettuce, spinach and kale. Along side that is homemade whole grain sourdough bread.

If you want to learn how to make the best whole grain sourdough bread go to www.gnowfglins.com and check out the eCourse offered there.

Tuna Salad

2-5oz cans tuna fish or salmon

¼ cup sweet onion, chopped

Juice from 1 lemon

¼ cup cilantro, chopped

2 tbsp plain yogurt or 1 tbsp plain yogurt and 1 tbsp sour cream

Greens of choice (lettuce, spinach, kale etc.)

Drain tuna or salmon and place into a bowl. Add onion, lemon juice, cilantro and yogurt then mix well. Serve over salad greens with additional lemon as needed
