Taco’s with Homemade Tortillas

There isn’t really a specific recipe for the meat mixture. I change it up every time I make it.  Here is the general idea anyway………

Also, I need to try making the tortillas with either sprouted wheat or soaked wheat. I’ll let you know when that happens. I really need to plan ahead better!

Taco’s

 

1 lb. ground beef

1½ cups or 1 can of cooked black beans, rinsed

1 cup onion, chopped

1 potato, finely shredded (optional)

2 tomatoes, chopped or ½ can of diced tomatoes

Cumin

Paprika

Chili powder

Oregano

Sea salt

Black pepper

Cayenne pepper

 

            Brown and season the ground beef, add in the onions and potato. Cover and cook until the onions and potatoes are soft. Season again. Add in the tomatoes and simmer covered for 15 minutes. Stir often. Serve with Homemade Tortillas, lettuce, tomatoes, cilantro, sour cream, avocado, etc etc.

Whole Wheat Flour Tortillas

 

3 cups fresh-ground whole wheat flour

1 tsp sea salt

1/3 cup grape seed oil

1 cup hot water

 

            Mix the dry ingredients together. Stir in the oil until blended then add the water until the dough forms a ball. Cover and allow the dough to rest for 30 minutes. Break off walnut size pieces and roll out until very thin. Heat a cast iron skillet on medium high heat. Cook the tortillas on each side until brown spots appear, about 2-3 minutes per side. Keep warm until ready to serve. Great in Dessert Tortillas (page   ).
