Wardeh, thanks for all of the directions. I still am not sure if I have this right though. Sorry.

This is what has been cookin’ in my kitchen.

Trout served with Quinoa Tabouli

Hey oh ya ya

 

For the fish I just seasoned it with sea salt and lemon pepper. I then added some sliced lemons and sliced onion and put a  dollop of butter across the top. Baked it in a 400°F oven for about 20 minutes.

Quinoa Tabouli

 

3 cups cooked quinoa

½ cup sweet onion, chopped

1 clove garlic, minced

1 tbsp extra-virgin olive oil

Juice from 1 lemon

½ bunch of parsley

Sea salt to taste

2 tbsp extra-virgin olive oil

           

Heat 1 tbsp olive oil in a sauté pan. Cook the onion and garlic on low heat, until the onions are transparent. Stir in the quinoa. Pour this mixture into a bowl. Add the parsley, lemon juice and sea salt to taste. Add 2 more tbsp extra-virgin olive oil, and mix until blended. Can be served warm or cold.

Pesto with Whole Grain Pasta and Chicken

16 oz. fresh basil

2 cloves garlic

1 tsp fresh rosemary

1 cup fresh-grated parmesan cheese

3 tbsp pine nuts

Juice of ½ lemon

½ tsp sea salt

¾ cup extra-virgin olive oil

 

In a food processor or blender mix garlic, basil, rosemary, pine nuts, parmesan cheese, lemon juice and salt. Slowly drizzle in olive oil while machine is running. Mix until blended.

Peanut Butter Bars

Peanut Butter Bars with Sprouted Wheat

 

1 stick butter

4 tbsp raw honey

¼ cup raisins

½ cup dates

¼ cup water

1 egg

1/3 cup natural peanut butter

1 cup fresh-ground sprouted wheat flour

1 cup soaked and dehydrated oats

½ tsp baking soda

 

            In a mixing bowl cream the butter and honey together. In a blender or food processor puree the raisins, dates and water, then add to the butter mixture. Add the egg and beat well. Mix in the peanut butter. Fold in the dry ingredients. Bake in a pre-heated 350° F oven for 20-25 minutes. Cool and eat or frost with Chocolate Frosting (page   ).

**You don’t have to use sprouted wheat or soaked oats, whole wheat and regular rolled oats will work fine.

Chocolate Glaze

 

¼ cup raw honey

4 tbsp cocoa powder

2 tbsp raw milk or cream

2 tsp butter

 

            Mix all of the ingredients together.

  1. Your Tuesday Twister is beautiful and all the foods look scrumptious. You did it all right – except that when you added your link to the MckLinky you added the main URL of your website instead of THIS post’s URL. But I edited that – so it is all good now! How is it going with soaking/dehydrating oats? I haven’t done it yet. Can you give me any advice?

  5. Wardeh, thanks again for your help!! I love soaking and drying oats. I usually put a little raw milk or plain yogurt and enough water to get the oats damp. I don’t put too much liquid so they don’t get mushy. I find it easier to mix with my hands. I then cover that and let it sit overnight. After that you can make granola the regular way by adding oil and honey and nuts and baking it. Or you can spread the oats out on a baking sheet and dehydrate them. After that is dehydrated you can eat is as cereal by adding sweetener or dried fruit. We like cinnamon and raw honey. Or you can use it in baking. Oatmeal cookies, or the Peanut butter bars above. Whatever.

  6. Quinoa tabouli sounds great! A good substitute for the usual bulgar. I’m not a fish person, but your pic makes me hungry! 🙂
