Peanut Butter Bars

This is how they all started.

IMG_0351

Way back when I was in the 4th grade!

They used to serve these with school lunch sometimes. I remember Steph C. and I loved them, so we found the recipe in the library at school.

Okay, I am in heaven and 9 years old again.

Steph where are you???

Peanut Butter Bars with Sprouted Wheat

1 stick butter

4 tbsp raw honey

¼ cup raisins

½ cup dates

¼ cup water

1 egg

1/3 cup natural peanut butter

1 cup fresh-ground sprouted wheat flour

1 cup soaked and dehydrated oats

½ tsp baking soda

In a mixing bowl cream the butter and honey together. In a blender or food processor puree the raisins, dates and water, then add to the butter mixture. Add the egg and beat well. Mix in the peanut butter. Fold in the dry ingredients. Bake in a pre-heated 350° F oven for 20-25 minutes. Cool and eat or frost with Chocolate Frosting (page   ).

**You don’t have to use sprouted wheat or soaked oats, whole wheat and regular rolled oats will work fine.

Chocolate Glaze

¼ cup raw honey

4 tbsp cocoa powder

2 tbsp raw milk or cream

2 tsp butter

Mix all of the ingredients together.

  2. Those were my favorite in school too! And your recipe makes them guilt free! I’ll have to try it! What did you use for the frosting?
