Jumble Cookies

I like cookies with a lot of stuff in them. These have naturally sweetened chocolate chips, naturally sweetened peanut butter chips, raisins and nuts.

Here I am creaming the butter, honey, eggs and raisin or date puree together.

With the remaining ingredients added.

Chocolate Chip Date Cookies

 

¾ cup dates

½ cup + 2 tbsp water

1½ stick butter

½ + 2 tbsp cup raw honey

2 eggs

2 tsp baking soda

½ tsp sea salt

3½ cups fresh-ground whole wheat flour

1½ cups naturally sweetened chocolate chips

 

            In a blender or food processor puree dates with water. It’s okay if they are a little chunky. Pour the dates into a mixing bowl with the butter, honey and eggs. Mix until creamy. Stir in 1 cup flour with the baking soda and salt. Mix well. Add remaining flour and chocolate chips and mix just until blended. Bake in a pre-heated 375°F oven for 8 minutes, or until lightly browned.

*The recipe calls for dates, you can use either dates or raisins.

**I divided the naturally sweetened chocolate chips, naturally sweetened peanut butter chips, raisins and nuts to equal the original 1 1/2 cups chocolate chips in the recipe.

  2. I’m just getting started with cutting out sugar, and I have your cookbook. Love your recipes, I don’t feel like I am going to feel deprived because I can’t have sugar. Just a quick question. Where do you find naturally sweetened chocolate and peanut butter chips? Thanks!
