Chicken Fried Rice and Salad

Since I no longer eat pork, (you can read God’s Key to Health and Happiness, to find out why you shouldn’t eat pork)I made Chicken Fried Rice.

It tasted great! I also made a salad with homemade Asian Salad Dressing to have with the rice.

Ham Fried Rice


3 cups steamed, brown rice

2 tbsp olive oil

2 tbsp butter

2 eggs, scrambled

4 oz. ham, diced or chicken

3 medium carrots, sliced thin

½ cup onion chopped

¾ cup fresh or frozen peas

2-3 tbsp Tamari sauce

Sea salt to taste

Red pepper flakes (optional)


In a sauté pan heat 1 tbsp olive oil and 1 tbsp butter. Stir in carrots and sauté for 2 minutes. Add onions and sauté 2 more minutes. Pour in 1 tbsp Tamari sauce to carrots and onions. Add the peas last.

In a separate pan scramble the eggs, and set aside. Sauté the ham in 1 tbsp butter, add the eggs and ham to vegetables. Then add the rice with remaining olive oil, and Tamari sauce as desired.  Serve.

Asian Salad Dressing


1/3 cup rice wine vinegar

2 tbsp Tamari sauce

¼ tsp fresh ginger, minced

1 small clove garlic, minced

1 tbsp raw honey

1 tsp sesame oil

1 tbsp toasted sesame seeds

Sea salt to taste


            Mix the vinegar, Tamari sauce and the honey together until the honey dissolves. Stir in the remaining ingredients. Pour over 4 cups fresh baby spinach, mix and serve.
