Chocolate Ice Cream

100_5347On a hot day like today we NEED ice cream!

Start with 2 free-range, fertile egg yolks.

100_5348Add the raw honey.

 

100_5351And the vanilla.

 

100_5352Next is the cocoa-powder, or carob powder if you like.

 

100_5354Stir in the cocoa-powder really well.

 

100_5357Add the raw cream and milk.

 

100_5358Looks good already!

100_5363Pour the mixture into your ice-cream maker, and freeze according to manufacturers directions.

I like to put a layer of parchment paper right on top of the ice-cream, to keep it fresh tasting. Then I cover it with plastic.

 

Chocolate Ice Cream

 

 

3 cups raw cream

1 cup raw milk

2 egg yolks

¾ cup raw honey

½ cup naturally sweetened chocolate chips

2 tbsp cocoa powder

1 tsp vanilla

1 tsp chocolate extract (optional)

Dash of sea salt

 

            In a bowl mix the cream, milk, egg yolks, vanilla and chocolate extract then set aside. In a small sauce pan on very low heat melt the honey, chocolate chips and cocoa powder together. Remove from the heat, stir in the salt and allow it to cool slightly. Mix 1 cup of the cream mixture into the chocolate until well combined. Stir all of the chocolate mixture into the cream mixture. Pour this into your ice cream maker and freeze according to manufacturers directions.
