On a hot day like today we NEED ice cream!
Start with 2 free-range, fertile egg yolks.
Add the raw honey.
And the vanilla.
Next is the cocoa-powder, or carob powder if you like.
Stir in the cocoa-powder really well.
Add the raw cream and milk.
Looks good already!
Pour the mixture into your ice-cream maker, and freeze according to manufacturers directions.
Cold, creamy, GOOD!
This recipe tastes like Fudgsicles if you have ever had one of those.
I like to put a layer of parchment paper right on top of the ice-cream, to keep it fresh tasting. Then I cover it with plastic.
Chocolate Ice Cream
3 cups raw cream
1 cup raw milk
2 egg yolks
¾ cup raw honey
½ cup naturally sweetened chocolate chips
2 tbsp cocoa powder
1 tsp vanilla
1 tsp chocolate extract (optional)
Dash of sea salt
In a bowl mix the cream, milk, egg yolks, vanilla and chocolate extract then set aside. In a small sauce pan on very low heat melt the honey, chocolate chips and cocoa powder together. Remove from the heat, stir in the salt and allow it to cool slightly. Mix 1 cup of the cream mixture into the chocolate until well combined. Stir all of the chocolate mixture into the cream mixture. Pour this into your ice cream maker and freeze according to manufacturers directions.
