This is what the batter looks like after you mix it and let it set for a little while.
I like to cook the pancakes in a cast iron skillet with BUTTER!
Saturated is the healthiest fat you can eat. YES I said healthiest. Butter and other saturated fats such as coconut oil provide energy, the building of cell membranes, help in healing and have a variety of good hormones. Fats included in a meal slow down nutrient absorption so we can go longer without getting hungry. They are also very stable, and don’t go rancid like hydrogenated oils. Margarine is NOT a food! And when you eat things such as margarine and shortening your body has no idea what to do with it, so it stores it somewhere instead of utilizing and metabolizing it!
This is where “my way” comes into play. I drizzle a little raw honey and molasses over the top.
By the way…..molasses is a GREAT source of iron. If you are iron deficient eat a spoonful of molasses everyday.
Then to top it all off, with a little dribble of raw cream or raw milk. Absolutely delicious!
This is a great alternative to real maple syrup. The last time I bought maple syrup they had to do a credit check and get an appraisal on our home before I could purchase any.
The Best Pancakes
Whisk together in a bowl:
1 cup fresh-ground whole wheat or spelt flour
1 tsp aluminum-free baking powder
½ tsp baking soda
½ tsp sea salt
In a separate bowl mix together:
1 cup raw milk
1 cup plain yogurt
1 tbsp melted butter or coconut oil
Mix wet and dry ingredients together, do not over mix. Let batter sit for about 10-20 minutes, it will rise and get really fluffy. Heat a cast iron skillet to medium heat. Melt 1 tsp butter for each pancake. Top with maple syrup, raw honey or fresh fruit.
