Soaked Granola

This is VERY good granola. Let me explain the purpose behind soaking it first.

All whole grains contain phytic-acid in their outer layer. Phytic-acid can combine with calcium, magnesium, copper, iron and zinc in the intestinal tract and block their absorption.

 

On a more personal note, oats give me a stomach ache if I don’t soak them first.

Soaked Granola 2

 

6 cups rolled oats

½ cup plain or naturally sweetened vanilla yogurt

1 cup water

 

            Mix this together cover and let sit overnight.

 

2/3-3/4 cup raw honey

¼-1/3 cup coconut oil

Dash of sea salt

 

            Pre-heat oven to 300°F. Heat the honey and coconut oil in a saucepan until dissolved. Stir the honey mixture into the oats. Spread the mixture out onto a baking sheet lined with parchment paper, or lightly grease the baking sheet.

            Bake for about 1½ hours stirring every 20 minutes for the first hour. Then check every 10 minutes. Cook until browned. Allow the oats to completely cool on the sheet pan. Place in an airtight container.

 

Serve with:

 

Raw milk

Yogurt

Dried fruit

Nuts

Coconut

Carob chips

Fresh fruit
