This is another one of those quick fix, spring meals. Everyone can put what they want on their own. And to add in a little more good protein I added some black beans with the cheese.
The lighter color tortillas are made with spelt. Really good. The darker tortillas are multi-grain. Very good also.
Strange but good–one of the ingredients listed on the multi-grain tortillas is raisin puree.
Fresh cut vegetables: tomato, red bell pepper, sweet onion, zucchinni, lettuce, spinach and cilantro. Don’t forget the jalapeno!
